On Saturday I tried the first of my new recipes for May. It was another
Weightwatchers recipe, adapted a little - Broccoli and Broad Bean
Tajine. It was served with couscous and apricots. Delicious.
Ingredients:
Oil
Onion
Garlic (2 cloves)
Carrot (50g)
Broccoli (150g)
Beans (1 can)
Chopped Tomatoes (1 can)
Tomato Puree (1 tbsp)
Sweet Red Wine (50ml)
Couscous (75g)
Apricots (1can)
Olives (6)
Mint
Cumin
Cinnamon
Cardamom
Black Pepper
Brown the onion in the oil. Add the garlic and brown for a couple of minutes. Add the tomatoes, puree and wine and simmer for a few minutes. Add the other ingredients and then the spices. Meanwhile cook the couscous, adding the apricots for the last few minutes. Serve with the olives and fresh mint. Enjoy!
