- 25gg butter
- 125g desiccated coconut
- 125g caster sugar
- 2 drops vanilla essence
- 2 egg whites
- Preheat the oven to 200 degrees and cover a baking tray with baking paper.
- Melt the butter, mix in the remaining ingredients and stir for four minutes.
- Shape the mixture into 24 balls on the baking parchment.
- Bake in the middle of the oven for twelve minutes or until golden brown.
- Remove from the oven and allow to cool for fifteen minutes.
