Ingredients:
- 100g raisins
- 100g sultanas
- 100g currants
- 50g cherries
- 1tsp ginger
- 1tsp nutmeg
- 1/2 tsp mace
- 2 tsp cinnamon
- 1/2 apple
- 1 lemon
- 1 orange
- 120ml whiskey
- 200g cornflour
- 175g rice flour
- 50g butter
- 1 egg
- sugar
- Mix all the dried fruits and spices.
- Mix the chopped frech fruits in a blender.
- Add to the dry ingredient mix along with the whiskey and set aside for at least two hours.
- Combine the flour and butter.
- Add 8 - 10 tbsp of water and knead to form a dough and chill for 30 minutes.
- Preheat the oven to 180 and grease your baking tins.
- Roll out your pastry to about 5mm and cut into circles to line your tins.
- Spoon the mix onto the pastry.
- Cut smaller circles as lids for the pies, pinching the edges together.
- Beat the egg in a bowl and brush the top of each pir generously.
- Bake for about 20 minutes until lightly brown.
- Allow to cool and sprinkle with sugar to taste.
