Recipe: Mince Pies

Yep, it's that time of year again!


Ingredients:

  • 100g raisins
  • 100g sultanas
  • 100g currants
  • 50g cherries
  • 1tsp ginger
  • 1tsp nutmeg
  • 1/2 tsp mace
  • 2 tsp cinnamon
  • 1/2 apple
  • 1 lemon
  • 1 orange
  • 120ml whiskey
  • 200g cornflour
  • 175g rice flour
  • 50g butter
  • 1 egg
  • sugar
Instructions:

  1. Mix all the dried fruits and spices.
  2. Mix the chopped frech fruits in a blender.
  3. Add to the dry ingredient mix along with the whiskey and set aside for at least two hours.
  4. Combine the flour and butter.  
  5. Add 8 - 10 tbsp of water and knead to form a dough and chill for 30 minutes.
  6. Preheat the oven to 180 and grease your baking tins.
  7. Roll out your pastry to about 5mm and cut into circles to line your tins.
  8. Spoon the mix onto the pastry.
  9. Cut smaller circles as lids for the pies, pinching the edges together.
  10. Beat the egg in a bowl and brush the top of each pir generously.
  11. Bake for about 20 minutes until lightly brown.
  12. Allow to cool and sprinkle with sugar to taste.
