Recipe: Broccoli and Bean Tagine





Ingredients:

  • 1 onion
  • 2 cloves garlic
  • 100ml red wine
  • 2 cans chopped tomatoes
  • 1 tbsp tomato puree
  • 1 can kidney beans
  • 100g carrots
  • 100g broccoli
  • salt and pepper
  • cinammon
  • cardamom
  • cumin
  • coriander
Instructions:

  1. Cut and fry the onions, adding the crushed garlic when they start to brown.
  2. Add the wine, tomatoes, tomato puree and beans when the onions are browned.
  3. Chop the carrots and add to the mix.
  4. Add the spices and allow to simmer for about fifteen minutes.
  5. Add the broccoli.
  6. Simmer for a further ten to fifteen minutes.  Adjust the spices to taste and serve.
Tip: Sometimes we serve this with millet and peaches.
