White Bean and Artichoke Salad



New recipe of the week this week is this delicious and easy salad from Color Me Vegan.  It was very quick and easy to make, tasty, filling and lucky for us on our way to Amsterdam - easy to eat on the go.

Just mix two cans of broad beans, one can of artichokes (chopped), chopped olives, a yellow pepper, one red onion with fresh parsley, mint and basil and some olive oil and vinegar, season and you're good to go.  It's better when you let the flavours mix for a while in the fridge before eating.
