Ingredients:
- 125g butter
- 125g caster sugar
- 3 eggs
- 3 large ripe bananas
- 175g rice flour
- 50g cornflour
- 1 tsp mixed spice
- 2 tsp baking powder
- pinch of salt
Instructions:
- Preheat the oven to 180 degrees and prepare a 1kg loaf tin.
- Cream the butter and sugar until light and soft. Beat in the eggs, one at a time.
- Add the mashed banana, flour, mixed spice, baking powder and salt.
- Pour into the loaf tin and bake for sixty - ninety minutes until a skewer inserted in the middle comes out clean. Allow to cool.
