Recipe: Banana Bread


Ingredients:

  •  125g butter
  • 125g caster sugar
  • 3 eggs
  • 3 large ripe bananas
  • 175g rice flour
  • 50g cornflour
  • 1 tsp mixed spice
  • 2 tsp baking powder
  • pinch of salt
Instructions:

  1.   Preheat the oven to 180 degrees and prepare a 1kg loaf tin.
  2. Cream the butter and sugar until light and soft.  Beat in the eggs, one at a time.
  3. Add the mashed banana, flour, mixed spice, baking powder and salt.
  4. Pour into the loaf tin and bake for sixty - ninety minutes until a skewer inserted in the middle comes out clean.  Allow to cool.
