Recipe: Chorizo Chilli

Ingredients:

  • 1onion
  • Butter
  • 75g bacon (optional)
  • Small pack of chorizo
  • Kidney beans
  • Butter beans
  • Sweetcorn
  • Green pepper
  • 3 tomatoes
  • A splash of vinegar
  • Spices (salt, paprika, garlic, caraway, habanero)
  • Tomato puree
Instructions:
  1. Brown the chopped onion in the butter.
  2. Chop the chorizo and bacon and brown with the onions.
  3. Add the beans, chopped vegetables and tomato puree. (I leave the water in the beans, if you prefer to drain them you can add water to the pan.)
  4. Spice to taste.
  5. Simmer for around twenty minutes. Check the spices and serve.
