- Quinoa
- Vegetable stock
- Red onion
- Cucumber
- Tomatoes
- Feta cheese
- Mustard
- Seasoning
Instructions:
- Cook the quinoa with the stock according to instructions.
- Chop and dice the feta and vegetables.
- Combine all the ingredients and season to taste.
We made this for a barbecue we went to last month. It's a nice summery side dish for almost anything. As you can see in the picture, we had the leftovers with falafel.
